Owner / Head Cheesemonger / Certified Cheese Professional
Brian Gilbert is a 20-year veteran of the food and beverage industry with a lifetime of passion behind him. He is a Certified Cheese Professional (CCP), and also serves as Head Cheesemonger at Beecher’s Handmade Cheese in Pike Place Market: the heart of Seattle’s food culture. Brian has spent nearly a decade making, aging, selling and procuring cheese, as well as educating the community about the processes of making and experiencing cheese. His mission is to convey the vital role food plays in our local ecosystem, and how this understanding helps us make more conscious consumer choices and become better citizens of our local and global communities.

Holly Regan is a freelance journalist with subject-matter expertise in food, beverage and independent travel. She has over a decade of professional experience as a writer, editor and marketer, and is an aspiring vegetarian chef; she loves to create, whether on the page or in the kitchen. With a background in anthropology, her mission is to explore and connect the world’s cultures, people and places as expressed through their art, customs and cuisine. She shares recipes and stories on her blog, Praise Seitan!, and runs her own content creation and editing business, Bard Creative Content Services.
